Caesar Salad

Caesar salad is the salad that turned me onto eating salads. The first time I visited La Pizzeria in Campbell (our local pizza joint), for some reason I thought, “What the heck! It’s a sunny day. Let’s eat some leaves with my pizza!”. So I did, and I liked it. Loved it, even! Couldn’t get enough. Something about the crispness of the leaves, the creamy yet minimal dressing, and the saltiness of the anchovies and parmesan really worked for me that day.

Fast forward a couple of years, and for some reason the restaurant decided to mess with my perfected salad. It tastes like they’ve taken the anchovies out of the dressing. At first I was sad, but then I took it as a challenge to recreate my favorite salad at home, which turned out to be very easy. When you add this to a homemade pizza, you’ll feel like you’re at the pizzeria! (more…)

Courtney's Mediterranean Couscous

Once upon a time I used to make this meal a couple of times a week. Then I wandered a bit, trying new things, new flavors, and I no longer had time for my tried and true couscous recipe. This week I decided to bring it back, and I’m glad I did. I missed you so, couscous salad.

I first started making this dish when I stumbled upon Near East couscous in the store. I decided to give it a whirl, and given the Mediterranean bent to the flavors (garlic, olive oil) I decided to top this with a Mediterranean salad, and a bit of chicken for good measure. (more…)

Cobb Salad

Cobb Salad

Now, I know a Cobb Salad is in no way, shape, or form healthy. But I really don’t care much for salads. However, this one I like. It’s a way to get some greens and get full at the same time. And while this salad is off-the-charts for cholesterol, I decided since I don’t care much for bottled dressings I’d make my own ranch, and that afforded me the opportunity to bring the calories in this down from astronomical to somewhere in the 400 range (See how I switched from cholesterol to calories? Like that, huh?). Amazing! So I can (almost) call this a healthy recipe. Or I could add some extra bacon and call it a day. (more…)

Pan-Seared Salmon… but the Salad was the Star!

Pan-Seared Salmon and Kale Salad

Earlier this week, while persuing the Kitchn, I stumbled upon this recipe for Kale and Ricotta Salata Salad. I must have been craving greens that day, because immediately upon seeing the picture, the first thought to cross my mind was “MUST MAKE!!!” (you can also insert a drooly face here). So I popped over to Kim Severson’s site to get the recipe, and off to the store I went to procure the ingredients. (more…)
