Shrimp, Proscuitto, and Scallion Spiedini

Looking for something to cook on the grill this weekend? This recipe from La Cucina Italiana for Shrimp and Proscuitto spiedini is quick, easy, and very tasty. And it looks pretty impressive too! I would suggest spritzing a little olive oil on these before putting them on the grill.

I served this recipe with grilled tomatoes and onions and a garlic-studded loaf of bread. For the tomatoes and onions, create a skewer of both, give a slight coating of olive oil, salt and pepper, and cook accordingly on the grill (onions will take much longer than the tomatoes). When you pull them off the grill, slide off the skewer and into a serving bowl, and top with some herbs, such as fresh thyme or shredded basil, and a splash of balsamic vinegar.
