How do I describe these carrots? Savory. Cheesy. Souffle-like speckled with bits of orange. My months-long obsession with this picture didn’t set me up only to let me down. This recipe is one that exceeded my expectations and brought a hush over the Thanksgiving dinner table as everyone dug in.
Let’s back up a moment. What is taleggio cheese? It’s an Italian cheese made from cow’s milk that is soft. While its rind looks and smells a bit funky, the inside yields a mild-yet-still-full flavor. The fat content, at 48%, tells you how happy this is going to make your taste buds. Those Northern Italians know what they’re doing.
The recipe is quite simple, though the fact that you will need to chop a lot of carrots and cook them two ways adds on a bit of time. If you’re making these for Thanksgiving (they also make a great steak-dinner side), I would suggest prepping the night before by at least slicing the carrots and grating the cheese. (more…)

I’ve long wanted to make this recipe, which is in on of my favorite cookbooks, the Food of France. After my first dinner paired with La Fiorita’s Brunello di Montalcino, I decided this might be the perfect wine to accompany the dinner. After all, if I’m going to the trouble of locating venison here in the Bay area, I’m going to make this a special meal! Plus, the brunello has a somewhat fruity flavor, with more than a hint of berries that I wanted to see if I could coax out more by pairing with blackberries. (more…)

When fresh figs start appearing in the market, I get excited. There’s something about a fruit so fleeting that you can only get it a couple of times a year. When I made my locavore-inspired dinner a while back, the first figs had hit the market, and luckily Whole Foods wasn’t just carrying the black mission figs I’m not a fan of, but also the greenish-brown calmyrna figs that are my favorite, fresh or dried.
I had picked up a basket of these guys with no idea what I planned on doing with them. The next day, I decided on the summer vegetable gnocchi for dinner, so I began my fig brainstorming with an appetizer in mind. Wine-poached figs? No, that seemed more suitable for a dry fig. Balsamic-glazed figs? Now we’re talking! (more…)

Last year I struggled and struggled with what type of stuffing (or dressing, as I don’t generally stuff my turkey) to fix. After digging through many recipes, I decided the winter fruit and nut stuffing would be a perfect addition to the table. Filled with dried fruits and sweetened with a bit of Sauternes, it lacked an overly-sweet flavor that I had feared other fruit stuffings would bring to the overall menu.
One word to the wise: always read through a few of the comments on websites that have them. While reading through the comments on this particular recipe, I realized there was a misprint on the website, and the recipe should contain some chicken stock as well. So I made the necessary changes, and this recipe turned out perfectly. (more…)

It’s been a while since we’ve had a rabbit recipe on here, hasn’t it? While many of my rabbit recipes have been heavier meals, this one is versatile. You can make it a bit heavier, or a bit on the lighter side. This evening I made it lighter, on accident, but decided it was the preferred way to serve this dish during the summer months.
I was first attracted to this recipe because of its use of the liver in the sauce. It’s not that I’m gaga for livers, I just like the idea of using all the bits that might otherwise find their way to the trash. The other reason I was attracted to this recipe was the pasta; it looked super simple to make. When doughs are involved, even pasta dough, it’s really 50/50 as to whether or not it will turn out right for me. So let’s take a look at this super-simple recipe. (more…)
