Biscotti

Earlier this week, I told you about one of my old favorites I made over the weekend, the amaretti. The other yummy cookie I made to go with our coffee for the week was a biscotti. Biscotti is one of my favorite morning coffee accompaniments, but I usually buy it at the store. Cappuccino with Amaretti and Biscotti

This weekend I decided to take the time to create plenty of homemade goodies to enjoy during the work week. Of course, the day of the friends coming to visit, I felt bad that I was just going to throw out some sugar cookies from a bag, no matter how nice of a bowl I sat them in. I remembered I had some chocolate chips left over from some failed magic cookie bars, and an idea struck! I could dip the sugar cookies into melted chocolate, and it would seem a bit more special! Cookies & Milk

Sometimes a girl just feels the need for some comfort food. Sweet comfort food. While it might be disastrous for my waist line to keep chocolate chips in the house, I’m pretty sure it helps my mental state.

After a few times making these cookies, I think I finally settled upon the perfect balance of wheat flour and white flour to make a sturdy, fat cookie that is the right amount of melt-in-your-mouth. The dough comes out nice and stiff, so you can easily grab a palmful of it, plunk it on the cookie sheet, and have 12 of these fellas in no time. (more…)
