Biscotti

Earlier this week, I told you about one of my old favorites I made over the weekend, the amaretti. The other yummy cookie I made to go with our coffee for the week was a biscotti. Biscotti is one of my favorite morning coffee accompaniments, but I usually buy it at the store. I’ve seen it made on cooking shows, and after reading through my cookbooks, I found a rather simple recipe for an almond biscotti. (more…)

Amaretti for breakfast

Cappuccino with Amaretti and Biscotti

This weekend I decided to take the time to create plenty of homemade goodies to enjoy during the work week. One of the things my husband has been wanting since getting the espresso maker is “tiny cookies” to go with his morning cappuccino. So this weekend I decided to make one old favorite and something new as well.

The old favorite is an amaretti cookie. I discovered these in the A16 cookbook. It’s one of the desserts that looked fairly simple, so I tried it, and while my first batch had issues, I finally figured out the trick to getting the perfect amaretti cookies every time (so the recipe below is updated accordingly). A quick and easy dessert

Chocolate-dipped Cookies

A while back, I had some friends over, and I didn’t have the time to concoct any elaborate dessert (or even an easy dessert that takes time, like cupcakes). So while I was at the store, I picked up a bag of sugar cookies and figured those would be just fine set out in a little bowl. Sweet snack done!

Of course, the day of the friends coming to visit, I felt bad that I was just going to throw out some sugar cookies from a bag, no matter how nice of a bowl I sat them in. I remembered I had some chocolate chips left over from some failed magic cookie bars, and an idea struck! I could dip the sugar cookies into melted chocolate, and it would seem a bit more special! Chocolate Chip Cookies

Cookies & Milk

Sometimes a girl just feels the need for some comfort food. Sweet comfort food. While it might be disastrous for my waist line to keep chocolate chips in the house, I’m pretty sure it helps my mental state.

After a few times making these cookies, I think I finally settled upon the perfect balance of wheat flour and white flour to make a sturdy, fat cookie that is the right amount of melt-in-your-mouth. The dough comes out nice and stiff, so you can easily grab a palmful of it, plunk it on the cookie sheet, and have 12 of these fellas in no time. (more…)
