This may be my hands-down favorite quick-an-easy meal. It’s so good, in fact, that I often order it if it’s an option on a restaurant menu! There’s just something about the thin pieces of angel hair coated with garlic, olive oil, and tomatoes that gets me every time.
Recreating it at home is pretty easy, and can be done in a myriad of ways depending on what you have on hand. A must is having olive oil, angel hair (though it might be argued that you could use a thicker noodle), and garlic. To start, get your water going so it will be boiling when you need it (add a tablespoon of kosher salt once it begins boiling). Add a tablespoon or so of olive oil to a skillet over medium-low heat. Saute chopped garlic in the oil until it has released its flavors (I usually do two cloves for myself, but I love garlic). (more…)

A couple of years back I saw this recipe on an episode of Everyday Italian. The theme of the show was Picnic Planner, as Giada was packing a lunch to surprise her hubby with at work. The show was a bit cheesy, but the recipes had stuck in my mind for a while, especially the pasta. I love arugula and had wanted to make this for quite a while.
Earlier this year when arugula came in in the garden, I knew just what to use it for. I had always kind of thought this recipe was odd for a picnic, but after making it, I decided it was more like a pasta salad — perfect warm or at room temperature. The sauce you pour over it is basically a dijon vinaigrette, which is very quick and easy to make. Thus me making it this week with what I could find in the refrigerator and pantry. (more…)

Another quick weeknight meal for you, as you continue to recuperate from the marvel that is the 3-day weekend. While this may take just a tad longer than the zucchini and onion stir-fry I featured yesterday, it’s not too much longer, and it’s oh-so-delicious! Plus, it’s another use for that stock you’ve made; this time it’s not a soup!
There are two things you will want to do before you start slicing and dicing. Put your water on to boil, and get the Italian sausages defrosted and ready to go in the pan. Now that we’ve cleared that up, 1-2-3–Let’s cook!! (more…)
