Bellini - Courtney-style

With peach season in full swing, I decided it was time to make a favorite of mine (and really, when a sparkler is added, when is it not a favorite?), the bellini. As I’m sure you already know, the bellini was invented at Harry’s Bar in Venice. It’s a blend of white peach puree and prosecco, two sweet items. While I think it is a grand marriage of two yummy things, I always like adding a bit of liquor to any of my champagne/fruit juice cocktails. It cuts down a bit on the sweetness, which is perfect for me. As you can imagine, this caused tremendous confusion at Harry’s, me toying with their decades-old drink. (more…)

Braised Kale with Polenta

My first crop of kale finally came in (from the Red Russian plant) and while I had anticipated making something summery, like the Kale and Ricotta Salata Salad, it’s been so cool and rainy here that I decided to instead do a favorite that I never got around to this past winter (has winter really passed given that it’s been 60 and rainy?). I stumbled upon this recipe for Braised Lacitano Kale with Tomato and Anchovy Soffritto in the A16 cookbook, and it was the first way I ever made kale. I fell in love and didn’t branch out trying other recipes for quite a while.

This is the perfect meal for a chilly night. It feels somewhat healthy, but it’s hearty at the same time and will be sure to fill you up. (more…)

Green Bean Bhaji

One of the things I didn’t plant in my garden this year are string beans. Last year, while stocking up on seedlings from Cole Canyon Farm, the guy running the stand gave me free string beans. I’m not really a fan of green beans — I don’t hate them, but they’re not something I ever really want to eat. My husband, however, really likes green beans so I decided to plant them and give them a try. (more…)

Curried Black Eyed Peas with Plantain

Looking for a dinner that transports you to the Caribbean, warms you up like comfort food, and is still healthy? Yeah, I didn’t think so — that would be an odd request to make of dinner. But, even if you weren’t looking, it’s a great feeling to have, and it’s exactly what Post Punk Kitchen’s Curried Black Eyed Peas delivers.

I’ve read about her book, Appetite for Reduction: 125 Fast and Filling Low-Fat Vegan Recipes, a couple of places, and I was intrigued. I’m the furthest thing you can find from a vegan, but once in a blue moon on accident I’ll make something vegan, and I like it. So it’s been an area I’ve thought about dabbling in. I just get scared off by recipes that include nutritional yeast and tempeh.

One day a friend of mine mentioned she had been using this cookbook and loved it, but then she pointed me toward the site. I spent the better half of the day trying to decide what I would cook that night. Did I want to go crazy and throw “gluten free” in the mix? Well, that’s what I ended up doing. (more…)

Lamb Sliders

One of the best parts of making the Spicy Cig Kofte is using the leftovers. Usually I buy a leg of lamb, so after portioning out the 3/4 pound I need for the kofte, I easily have a couple of pounds left over. What to do with all that lamb? Make lamb sliders!

This recipe was born from my love of the kofte. I wondered how the spicy mixture would taste grilled. So I altered the spices a bit, made a couple of substitutions given that there are certain ingredients I didn’t have left over, and one of my favorite burgers was born (and my husband’s favorite burger, and my friend’s favorite burger… they’re really good!).
