After making my Sriracha pickles, determining I loved them, my next problem was what to do with them. Being a person who hasn’t typically eaten pickles, the only thing I’ve really ever done was peel it off of my Krystal burger and feed it to Milo on road trips. This pickle, however, seemed to need more presence than just slapping it on a hamburger. Then I had the aha! moment. Chicago dogs! They’re usually slathered in a plethora of pickles – relish and spears.
I’ll say this upfront – my leaping off point was the Chicago dog. This is in no way actually a Chicago dog. Nothing bugs me more than someone bastardizing my hometown favorites, which is basically what I’m going to do here. Apologies in advance.
The Chicago dog is said to be “dragged through the garden” it has so many vegetative toppings on it. There seems to be a few variations, but the idea is relish, pickle spears, tomato, sport peppers, mustard, onions, and celery salt top an all-beef hot dog. Since I had spicy pickles, with a sweet and tangy flavor, I decided I to forgo the sport peppers, figuring I had the pucker and spice covered. (more…)

Let’s just preface this post by saying I’ve always hated pickles. Not just disliked, but hated in that “oh my god I’m so grossed out by this thing” way that you can hate a food. In high school someone taunted me by waving a pickle in my direction (of the food variety, let’s not let our minds end up in that track!). I immediately, without hesitation, slugged her as hard as I could. Hmmm, anger issues much?
Anyhow, fast forward to the present-day, calm-cool-semi-collected Courtney, who last year in her CSA received a pound of pickling cucumbers. Not one to throw away good food, I decided I would attempt to pickle the things, and at the least I could push them off on my husband and friends. I dug in, searching my favorite sites for pickle recipes, hoping to come across something that didn’t include dill. After all, if I’m going to spend the time in the kitchen, I would like to at least try the thing I make. Not being a fan of dill or pickles, I can’t imagine bringing such a thing near my tongue.
Then I stumbled upon it – the Sriracha pickle! Sriracha = something I love. Pickle = something I hate. (more…)

A while back, I was feeling a bit sniffly and stuffy, so I spent a few days on the couch browsing the web. Apparently I was in the frame of mind to check out Ayurvedic remedies for my stuffy nose, and thus I spent a lot of time reading blogs and articles stuffed to the brim with advice and ways of life from the sub-continent.
Kitchari was apparently the new kid on the block (or, as it is, the newly discovered elder on the block). I read multiple articles about its abilities to help you cleanse, its ease on your digestive system, its nutritional values (apparently it is a complete protein, though I’m thinking that has more to do with the dal, less to do with the rice and spices). While I scoffed at the idea of eating nothing but this moong dal and rice mixture for any amount of time, my stomach started to growl and the craving had set in. I already had some leftover, new-age pakora in my fridge; this could just be a spicy rice addition with a little beans. Plus, it’s healthy, right?
So I consulted the various recipes I had found around the internets (that link being one of them), then I cracked open my favorite Indian cookbook from “the food of” series, and I started devising a recipe. (more…)

Three-day weekends and sunshine just scream for firing up the grill, getting together with friends, and enjoying all the world has given you. So in that spirit, I thought it would be fun to give you a little inspiration if your plans this weekend involve barbecuing, or grilling out as we call it down South (because barbecue is reserved for almighty smoked pig event!).
Double Cheeseburgers: If you’re looking for the standard fare, there’s nothing much better than the cheeseburger. Juicy beef, melty American cheese, fresh from the garden lettuce – mmm! Here’s my take on the double cheeseburger, with a great, mild seasoning for the meat.
Lamb sliders: If you’re looking for an amazing twist on the humble cheeseburger, look no further. This recipe starts with fresh ground lamb, adds some heat and Mediterranean spices, and gets topped with feta, haloumi, and cucumbers for a refreshing crunch!
Grilled Chicken Wings: I’m going to go ahead and say you should get at least 3 pounds of chicken wings per person, because these guys are amazing. There will be nothing left on the bones and your guests will be begging for more (or at least for the recipe).

I’ve been on a bit of a Thai kick lately. Earlier this week I played around with a couple of recipes for Thai beef salad, and while I was perusing my Thai recipes, I came across a recipe for Tom Khaa Kai, or Chicken, Coconut and Galangal soup.
As I read through the recipe, I realized I had most of the items I needed already in my pantry or freezer to make the tropical-flavored soup. Originally I was going to make the soup to go with the Thai beef salad, but I ended up not being that hungry the other night, so I decided to put my soup and sandwich tray to good use, making monster spring rolls to go with the soup.
And that’s how this recipe became more than a variation on the cookbook recipe. (more…)
