Heeeeyy Boo-boo! Whadya think they got in that pic-a-nic basket?
I’m guessing Yogi never expected to get a basket full of Spanish goodies such as gazpacho, zucchini cake, lima bean salad, and piquillo peppers, but had he stumbled upon our party, that’s certainly what he would have found. Along with a pitcher or two of sangria!
A couple of weekends ago we decided to head out to a new park for a picnic and some light hiking. I was a little perplexed as to what to make, because at the time my husband and I were doing a gluten-free diet, and a friend of ours that was going is also gluten-free. So gone was the usual pressed sandwich meal, but I needed something that would not go off in the sun (no mayo or raw anything) but also wouldn’t be too heavy since it promised to be a warm day, and I knew the alcohol we would consume would already drain our energy a bit. Then it hit me – a Spanish-themed meal. Sangria is the perfect summer time drink, and with foods like gazpacho and stuffed peppers, we would be filled up and satisfied, but definitely not stuffed. And all the items could be served either room temperature or cold. And almost everything was vegetarian. While no one in the group was vegetarian, it’s always good to have some go to recipes that are meat-free for friends that don’t eat meat. (more…)

It always happens after the big holidays – you have a few leftovers in the refrigerator. At first you work your way through the the prepared foods, simply reheating or making sandwiches from hams and turkeys, but there’s always those extra bits of raw ingredients left over, such as excess vegetables that may not have made their way into the rich dishes you created for Christmas dinner.
Fear not! Instead of simply steaming or boiling these veggies, why don’t you add some spice to your life, making this modern take on vegetable pakora? (more…)

When the word “vegetarian” pops up in the context of someone coming to dinner, it can sometimes make this Southern girl’s heart skip a beat.
“Whatever will I cook?” I think to myself.
Add that to Thanksgiving dinner, and the heart goes pitter-patter for more than a beat. I mean, I’m the person who puts giblets in the dressing and cooks brussels sprouts with bacon fat. Mashed potatoes are one of the few things meat isn’t added to.
Then I stop, and I realize there are so many meals that I make without the addition of animal fat. I cook with copious amounts of olive oil these days, instead of butter. Hell-o, I even make gravies that don’t start with meat, so making a Thanksgiving dinner that works for both the omnivores and herbivores in my life should be a breeze. But I don’t want it to just work, I want it to be an extra-special meal for everyone coming to dinner. (more…)

One of the things I didn’t plant in my garden this year are string beans. Last year, while stocking up on seedlings from Cole Canyon Farm, the guy running the stand gave me free string beans. I’m not really a fan of green beans — I don’t hate them, but they’re not something I ever really want to eat. My husband, however, really likes green beans so I decided to plant them and give them a try. (more…)

Looking for a dinner that transports you to the Caribbean, warms you up like comfort food, and is still healthy? Yeah, I didn’t think so — that would be an odd request to make of dinner. But, even if you weren’t looking, it’s a great feeling to have, and it’s exactly what Post Punk Kitchen’s Curried Black Eyed Peas delivers.
I’ve read about her book, Appetite for Reduction: 125 Fast and Filling Low-Fat Vegan Recipes, a couple of places, and I was intrigued. I’m the furthest thing you can find from a vegan, but once in a blue moon on accident I’ll make something vegan, and I like it. So it’s been an area I’ve thought about dabbling in. I just get scared off by recipes that include nutritional yeast and tempeh.
One day a friend of mine mentioned she had been using this cookbook and loved it, but then she pointed me toward the site. I spent the better half of the day trying to decide what I would cook that night. Did I want to go crazy and throw “gluten free” in the mix? Well, that’s what I ended up doing. (more…)
