Collard Greens

Collard greens is one of those things that I kept trying to like, but for the life of me I couldn’t. It never made sense, because I like spinach, stir-fried mustard greens, kale… so why not collard greens? So when I recently made Hoppin’ John, which almost has to be accompanied by greens, I decided to give it another spin. If anything, my husband loves all kinds of greens, so he could eat them. Lucky for me, this time I hit upon a magical combination of ingredients that made me love these as much as all the other greens I’ve fell in love with over the years. I took the preparation approach of an Italian-stewed kale I love, mixed in my favorite dressing approach from spinach salads, and was careful not to overcook the greens so there was still a bit of bite to them. The result was nothing short of fantastic, and I foresee serving this dish a few more times this winter before collard greens disappear. (more…)

Blackberry & Goat Cheese Salad

I’ve said it before and I’ll say it again – for me to like a salad means it is going to have to be hearty and filling. That doesn’t mean it needs to be loaded down in meats, cheeses, and croutons (though an occasional antipasto salad is yummy!). Enter this blackberry salad. This recipe was borne of items that happened to be in my refrigerator & garden, but it immediately became a favorite of mine. It works because it has a sweet and sour component from the berries and vinegar, a creamy component from the goat cheese, a crunch from the pecans, and the slight warmth I get from warming the oil, sauteing the shallots, and warming the blackberries. The result is a satisfying, luxurious-tasting meal that also ensures I get my greens and antioxidants for the day. (more…)

Some Greens for the Thanksgiving Table

I always struggle with what types of greens to put on the table for Thanksgiving. Though I love creamed spinach, it always seems too indulgent for an already cream-and-butter-laden meal. Green beans are my default, because everyone else seems to love them so much, but they’re really not my favorite. Asparagus isn’t in season, and broccoli just doesn’t seem very Thanksgiving at all.

However, for last year’s Southern Indian-inspired Thanksgiving, the sides weren’t too creamy, so I decided to do a riff on creamed spinach that contained a hint of cream, but was also filled with flavors and spices of India, so as not to be bland. The result is one of my favorite ways to serve spinach, Thanksgiving or not! (more…)
