Veal Meatballs with Artichoke and Carrot

When I saw this recipe, it just screamed “Spring!!!” at me. Fresh artichokes, veal, carrots, citrus, and a bit of cream. Just heavy enough to break the chill of a spring evening, but light enough to not weigh you down as you’re moving into the warmer months. With Easter just around the corner, I thought it would be the perfect time to post this special meal that takes a little bit of time, but shines so beautifully on the dinner table and is the perfect meal to serve family style that it is worth it! Orecchiette with Peas and Mint

I’m feeling like quick and easy is the way to go on hump day, so with that theme in mind, I give you orecchiette with peas and mint, one of the simplest one-pot meals to make. It’s the perfect pasta for this time of year – simple flavors that aren’t to heavy, leaving you with the taste of tangy goat cheese, sweet peas, and fresh mint dancing around in your mouth.

Strawberries

Instead of writing about something I’ve made, I thought I’d give you a preview of what I will be (hopefully!!) writing about this summer when the bounty of the fruits and veggies I’ve planted come in.

Last year, I planted a large pot with four wild strawberry plants, and Raju and I looked forward to the strawberries ripening one or two at a time. These guys taste so much better than the supermarket variety, so this year I planted 5 planters of strawberries. So maybe we can look forward to 5 strawberries at a time, or dare to dream, 10! A bit o’ green for St. Patty’s

Asparagus Soup with Fried Egg

While it’s not traditional Irish fare, I’m so looking forward to asparagus to be back in season so I can create this super-simple, beautifully green soup, so it seemed apropos for this spring day. For this recipe you won’t need vegetable stock, nor will you need to do a lot of chopping. Simply boil the asparagus, onion, and garlic, puree, and top with fried egg, baguette, and a few garnishes of asparagus. Serve with J’s sparkling wine, and you’ve got a match made in heaven. Springy, green flavors all over your palate.
