Strawberries

Instead of writing about something I’ve made, I thought I’d give you a preview of what I will be (hopefully!!) writing about this summer when the bounty of the fruits and veggies I’ve planted come in.

Last year, I planted a large pot with four wild strawberry plants, and Raju and I looked forward to the strawberries ripening one or two at a time. These guys taste so much better than the supermarket variety, so this year I planted 5 planters of strawberries. So maybe we can look forward to 5 strawberries at a time, or dare to dream, 10! Zucchini Bread: It’s what’s for breakfast!

Zucchini Bread

And lunch, and dinner… But that’s because it is just so yummy. A friend of my husband’s passed this recipe along to me, and she’s even given me a few slices from time to time. Since I had a ton of zucchini to deal with, I thought I would make a couple of batches of this recipe and freeze most of the loaves, since bread freezes nicely.

That was the plan, but it went a little awry as we’ve snacked and nibbled our way through two and a half loaves now. This morning I finally tucked one lone loaf into the freezer for a good winter snack. (more…)

Zucchini Pie

Zucchini Pie

Given the latest crop of zucchini to pop up, I’ve been trying to get creative with how to use all of it up before it goes to waste. This past weekend was a zucchini-stravaganza for sure!

One of the dishes I made was this Zucchini Pie. The recipe comes from a cookbook I received last Christmas, Heirloom Cooking with the Brass Sisters. I had actually popped open the book to find a recipe for Zucchini Cheese Bake, but when I read the story behind this, I decided it must be made (too!). (more…)

Grilling Vegetables

Attention Campbellites, this post is for you!

Actually, it’s for anyone that is experiencing those last warm days of summer that are fading into fall. This sandwich was inspired by products I pick up at my local farmer’s market, but if you’re not from these parts, you should easily be able to find most products in your local store (and the one secret ingredient online if not locally).

The veggie pita sandwich starts off with veggies – duh! Personally, I like to start with zucchini, summer squash, and onions. You could also try adding some tomatoes or eggplant to the mix. (more…)

Pizza sans Red Sauce

Pizza with Zucchini, Squash, and Blossoms

One of my favorite prepare-ahead meals is pizza. Every month or two, I make up a big batch of pizza dough (usually doubling or quadrupling the recipe I have for 2 12-inch rounds), and I portion those out into large size and individual size lumps that are frozen for later.

When I do this, I also like to cube up some mozzarella and portion it into baggies (generally around 5 – 8 ounces per bag) and make a few batches of pizza sauce, freezing those in individual baggies as well. At some point in the month or two, I end up poaching a bag of sauce here, a baggie of mozzarella there, and I end up with just the pizza dough. So there are a couple of go-to pizzas I make when missing the other ingredients. (more…)
